I really don't see the appeal in club hopping, staying with clubs for only a month or two. 

Isn't the fun in building something, either from scratch or from a certain level?

Me neither.

I imagine that the majority do so because they want instant success and then they find the club is not as competitive as they hoped for and/or after taking over they can't manage the finances. So they keep looking for a better opportunity and the cycle continues.  

Even if you could take over a top club, then any success isn't really a result of your own efforts though so I wouldn't get much satisfaction from it.

In addition there's no emotional attachment to a club you haven't built yourself so I guess it's easier to keep moving on.
