Theoretically you can train any player from YA(or YC10) to any position you need. Some players just born with attributes that are useful only on certain position, so it's better not to let waste them.
I try to follow that every position has regular flow of youngsters. Another detail to follow is goodness of youngsters on every position: once I missed that whole serie of midfielders were quite old pulls and too weak for my team, so there is big hole in my midfield now and 19yo ST boy being important part of it.
