I noticed when I trained one of my youth players that had talent, endurance and power over 5 balls [yellow], and trained his speed to get yellow his other balls dropped. Is it because of age or does other characteristics drop when you train another to get over 5 balls? He is U21.

It's because of his age. 

Age 21year, 23weeks (100%)

The age percentage starts dropping at around 21y18w, so although his age factor says 100%, it's approximately 99.85%.

Edit - If you don't sell him I think I would make him a keeper. That way he'll last much longer and will give you time to build a team around him. Good luck!

Either forward or keeper for me. Those are the ones who win games. 

Good job I was sitting down when I saw that talent. If you do sell him then it will be interesting to see how much he goes for. Obviously train him a bit first to push up the price. My guess is that he will sell for whatever price you put him up for.
